Speed is not moving fast

Watch a genuinely fast bartender and the surprising thing is how unhurried they look. They are not moving their hands quicker than you. They are taking fewer steps, touching fewer things, and never doing anything twice.

Speed comes from four places, in order of how much they matter: your station, your sequencing, your hands, and only then your pace.

  1. Your station

Everything you use constantly should be within one arm's reach without turning your body. The station is designed for this; new bartenders just don't set it up and then wonder why they are walking.
