The segments with the strongest economics are not entry points. Nobody green starts at fine dining. Nobody green starts on bottle service. A high-volume nightclub does not hand a station to someone who has never worked a bar, and a serious cocktail room does not either.
That is not gatekeeping and it is not unfair. It is arithmetic on the venue's side of the table. In exactly the rooms where the money is concentrated, a bartender who is slow, or who does not know the specs, or who freezes in a two-hour peak, costs the house real money in the same shift — and the manager who hired them is the one who explains it. Risk is highest precisely where the tabs are largest, so those rooms hire on demonstrated speed and on references from people they already trust.
